A beautiful start of an Italian dinner. If you like another flavor, substitute the Pecorino for Gorgonzola. |

Ingredients
|

|
450 grams cherry tomatoes, |
|
|
2 slices whole wheat bread, |
|
|
20 grams Mix of Italian hearbs (e.g. sage, rosemary, tarragon, thyme), |
|
|
1 clove garlic, pressed |
|
|
black pepper, |
|
|
salt, |
|
|
4 tablespoons olive oil, |
|
|
75 grams Pecorino Romano cheese, grated |
|
|
|

Instructions
|
|
|
Wash the cherry tomatoes and slice them thinly. Cut the crust from the bread slices and grind them to crumbles in the food processor. Chop the Italian herbs finely. Mix the tomato slices with the bread crumbs, the garlic and 3/4 of the herbs. Add salt and pepper to taste.

Heat 2 tablespoons of olive oil in a nonstick skillet. Spread half of the tomato mixture in the skillet and bake both sides. Transfer to a plate. Add another 2 tablespoons to the skillet and bake the rest of the tomato mixture in the same way.

Heat a grill. Build the tians: divide 1/3 of the cheese on the bottoms of four ramekins (5 fl oz / 150 ml). Top this with half of the tomato mixture, then cheese, followed by the rest of the tomato mixture and finish it with the remainder of the cheese.

|
Place the ramekins under the grill until the cheese is colored golden brown. Use a knife to cut the content from the ramekins and empty ramekins on 4 small plates. Decorate with some Italian herbs and serve immediately.
