Sage Derby Snack
When you have colorful cheeses you can make stunning snacks. Try this very simple snack with our Sage Derby cheese.
Ingredients
500 grams Sage Derby cheese,
1 package dark rye bread, rounds,
200 grams sauerkraut,
100 grams apple,
20 grams red onion,
25 grams sugar,
pepper,
2 tablespoons olive oil,
raisins,
Instructions
Rinse the sauerkraut with cold water and squeeze all the water out of the vegetable.
Mince the sauerkraut, the apple and the onion and add pepper, sugar and olive oil to taste.
Cut the Sage Derby cheese in 1 cm / 0.4 inches thick slices. Place one slice on a cutting board and spread the sauerkraut mixture on the cheese and cover it with another slice of cheese.
Use a cookie cutter to cut pieces of the cheese the same size as the rye bread rounds. Place the cheese on the rye bread.
Place the remainder of the cheese in the food processor and make a cheese mousse, add spices to improve the taste.
Decorate the small cheese towers with the mousse and finish them with a raisin.
