Mango-cheese bavarois
A creamy dessert in all aspects.
Ingredients
CHEESE BAVAROIS:
2 1/2 deciliters milk
4 1/2 leave gelatin
175 grams Chevre de Bellay
1 1/2 deciliters cream
10 grams sugar
MANGO BAVAROIS:
3 deciliters mango puree
2 deciliters cream
4 leaves gelatin
GARNISH:
raspberries
mint
Instructions
Cheese bavarois: Cook the milk with the sugar. Soak the gelatin in water for a few minutes, squeeze and add to the milk. Add the cheese to the milk and dissolve. Cool the milk until it begins to thicken. Whip the cream until it starts to stiffen and fold the cream into the cheese mixture.
Mango bavarois: Cook the mango puree and sweeten with sugar. Soak the gelatin in water for a few minutes, squeeze and add to the mango. Cool the mango mix until it start to thicken. Whip the cream until it starts to stiffen and fold the cream into the mango.
Rinse a cake form with cold water and fill it up with alternating layers of cheese and mango bavarois. Start with the cheese. Place the form in the refrigerator and cool.
Cut the bavarois in slices and garnish with raspberries and mint leaves.
