Hot tomato and mozzarella salad
A traditional combination of tomatoes and mozzarella cheese, only this time warm.
Ingredients
450 grams plum tomatoes, sliced
225 grams mozzarella cheese
1 whole red onion, chopped
4 pieces sun-dried tomatoes in oil, drained and chopped
4 tablespoons olive oil
1 teaspoon red wine vinegar
1/2 teaspoon Dijon mustard
4 tablespoons mixed fresh herbs (basil, parsley, oregano and chives), chopped
Instructions
Arrange the sliced tomatoes and mozzarella in circles in four shallow flameproof dishes. Scatter over the onion andsun-dried tomatoes. Whisk together the olive oil, vinegar, mustard, chopped herbs and seasoning. Pour over the salads.
Place the salads under a hot grill for 4-5 minutes, until the mozzarella starts to melt. Grind over plenty of black pepperand serve garnished with fresh herb sprigs, if you wish.
