
Hot tomato and mozzarella salad |

A traditional combination of tomatoes and mozzarella cheese, only this time warm. |

Ingredients

|
450 grams plum tomatoes, sliced |
|
|
225 grams mozzarella cheese |
|
|
1 whole red onion, chopped |
|
|
4 pieces sun-dried tomatoes in oil, drained and chopped |
|
|
4 tablespoons olive oil |
|
|
1 teaspoon red wine vinegar |
|
|
1/2 teaspoon Dijon mustard |
|
|
4 tablespoons mixed fresh herbs (basil, parsley, oregano and chives), chopped |

Instructions
|
|
|
Arrange the sliced tomatoes and mozzarella in circles in four shallow flameproof dishes. Scatter over the onion andsun-dried tomatoes. Whisk together the olive oil, vinegar, mustard, chopped herbs and seasoning. Pour over the salads.

|
Place the salads under a hot grill for 4-5 minutes, until the mozzarella starts to melt. Grind over plenty of black pepperand serve garnished with fresh herb sprigs, if you wish.
