Ingredients

2 whole red grapefruits |
|
|
3 tablespoons honey |
|
|
1 tablespoon white wine vinegar |
|
|
2 tablespoons oil |
|
|
salt and pepper |
|
|
5 sprigs mint |
|
|
4 bladeren lollo rosso |
|
|
275 grams soft Goat cheese, Bettine Blanc |
|

Instructions
|

|
Preheat the grill. Half the grapefuits and desect the meat from the fruit, save the juice (1 dl). Mix the grapefruit juice with 1 tablespoon of honey, white wine vinegar and oil. Add salt and pepper to taste. Keep 12 mint leaves for decoration, mince the remainder and add to the honey dressing.

Divide the grapefruit meat over 4 plates. Poor half of the dressing over the grapefruit. Rinse and dry the lettuce leaves and place these in the middle on the grapefruit. Cut the cheese in 4 equal parts and place them on a greased baking sheet. Baste the 2 tablespoons of honey over the cheese, and sprinkle with pepper. Place cheese 10 cm under the grill and bake for 2 minutes, or until the cheese melts and colors. Place cheese slices on the lettuse and sprinkle the dressing over the cheese. Decorate with mint leaves.
