
French pie with blue cheese and pears |

A dessert that will surprise your guest. A warm combination of fruit and cheese served in a pie. |

Ingredients
|
|
|
250 grams all-purpose flour, |
|
|
salt, |
|
|
125 grams butter, cold |
|
|
1 whole egg, |
|
|
1 whole egg yolk, |
|
|
50 grams almonds, blanched, |
|
|
200 grams Blue de Gex, |
|
|
100 grams creme fraiche, |
|
|
4 whole pears, |
|
|
lemon juice, |
|
|
2 tablespoons ginger syrup, |
|
|
|

Instructions
|
|
|
Mix flour and salt, cut in the butter, add the egg and combine lightly until the mixture resembles coarse meal or very tiny peas. Sprinkle 1-2 tablespoons of cold water over the flour mixture and knead the dough into a ball. Rest the dough for a bout 30 minutes in the refrigerator.

Preheat the oven to 400 degrees F or 200 degrees C.
|
|
|
Grind the almonds fine in a food processor. Crumble the Blue de Gex cheese. Mix the almonds, creme fraiche and half the cheese in a bowl. Peel, core and quarter the pears and sprinkle them with lemon juice.

|
Crease a pie form (24-26 cm or 9-10 inches), roll the dough out until 5 cm, 2 inches, greater in diameter than the pie pan and line the pie. Fit the dough in the pan. Divide the almond mixture over the bottom and pile the pear pieces with the top facing the center on the almond mixture in a circle. Top the pie with the remainder of the cheese.

Bake the pie in 30-40 minutes in the over until golden brown and finish the pie off with ginger syrup.
