Cold rice salad with onions and peppers
A colorful and tastful salad that is an excellent lunch recipe.
Ingredients
400 grams parboiled rice,
290 grams Sicily Style Rustic Peppers,
4 whole hot dogs, sliced
140 grams gruyere cheese, diced
16 whole Apulian Style Wild Onions, cut in half
olive oil,
salt and pepper,
Instructions
Cook rice in a large pot of boiling water according to directions. Drain and rinse in cold water.
In a large bowl combine cooked and cooled rice, hot dogs, cheese, onions cut in half, peppers, olive oil, salt and black pepper. Stir and chill in until serving.
