Beet slices with goat cheese
An appetizer that will certainly trigger the palets of your guests.
Ingredients
3 tablespoons olive oil
1 1/2 tablespoons lemon juice
1 teaspoon honey
1 clove garlic, minced
salt and pepper
2 sprigs basil
100 grams soft goat cheese without rind
2 whole cooked beets
Instructions
Stir oil, lemon juice and honey in a bowl, add minced garlic, pepper and salt to taste. Cut 2 large basil leaves in strips and mix with the vinaigrette.
Soften the goat cheese with a fork. Peel the beets and flatten the bottom. Slice the beets in 3/4-inch pieces and keep the top piece separately. Butter all slices with goat cheese and stag them up; finish with the top piece. Position each beet tower in the middle of a place and decorate the vinaigrette around it. Garnish with strips of basil leaves and serve immediately.
