Fiore Sardo is a cheese of very ancient origins that predates the Roman conquest of Sardinia. Fiore Sardo is older than Pecorino Romano. Fiore Sardo enjoyed great popularity in the nineteenth century when it was the only cheese to be exported from the island. It was particularly sought after by merchants in Naples and Genoa where it was used in the preparation of pesto.
It is an uncooked hard cheese made from fresh whole sheep's milk. The cheese ripened in moulds that will give the cheese its characteristic shape. After a brief period in brine, the moulds are lightly smoked and left to ripen in cool cellars in central Sardinia.

Idiazabal is originally produced high in the Pyrenees above Pamplona. This rustic Spanish gourmet sheep's milk cheese was often smoked in the rafters of the shepherds' huts. Today, it is made all over the Basque country in both factory and farmstead, from unpasteurized milk.
Idiazabal is produced in small drum shapes in varying sizes. The rind of this gourmet cheese is pale yellow in color and quite hard. The paste is creamy white and fairly compact with a few small holes. Smoked cheeses achieve a wonderful golden-brown color and dark ivory paste during its 5 months maturation.

San Simon is a popular smoked Spanish cheese. It is made from cow’s milk in the region of Galicia in the northwest of the country. The curd is transferred into pear-shaped moulds, after a day, the forms are immersed in hot whey. After two weeks, the cheeses are smoked.
