One of the secret of this very old cheese is the milk, produced by the cows that graze outside in the summer time in the lush green meadows of The Netherlands. Dutch summers are usually wet and pleasant in temperature, the perfect climate for grass to grow.
That same summertime with its mild temperatures creates an ideal environment in the more than 100 year-old traditional cheese warehouse for the maturation of the Reypenaer cheeses; a high humidity that prevents the cheeses from drying out. The unique microclimate in the warehouse and the micro-organisms and aromas that have built up over the years in the walls, beams and shelves, contribute to the development of the taste, as does the Old Rhine river, which winds its way around the back of the warehouse.
