Raschera D.O.P. is an Italian gourmet cheese named after the lake of the same name that is to be found at the foot of Mongioie in the Monregalese Alps. The descriptive epithet "di Alpeggio" ("alpine") can only be added if it is derived from the herds that graze on the pastures above 900 metres in one of the nine municipalities that have a right to apply the D.O.P. label.
Its squared shape in the past allowed for easier transportation in mule baskets and now is appreciated for its easy handling in the maturation cellars.
The colors and the scents of the alpine summer flowers and grasses are reflected in the intense yellow color of the cheese and in the sensual complexity that renders each form unique.
The gourmet cheese Raschera di Alpeggio is made from raw cow's milk and has a maturation of 60-90 days.
