Milleens is one of the most exciting washed-rind cheeses to come out of West Cork, Ireland. The milk comes from cows that graze the lower mountain slopes of Mishkish Mountain that overlooks the Atlantic.
The cheeses are made in discs. They are matured on the farm for two or three weeks. Some shops sell it straight away; others mature the cheese for another four to six weeks.
Milleens has a wonderfully pinkish-orange washed rind and a firm to creamy paste. The aroma, as you would expect from a washed-rind cheese, is farmyard like but the flavor is rich with sweet floral tones which linger on the palate.
