It is eaten all over Sardinia where it is for the sweetness of the sheep's milk from which it is made.

The Sardinian Pecorino Sardo Dolce is a sweet sheep milk cheese that is matured for a period of 20-60 days, resulting in a compact very light yellow, almost white paste.
This gourmet cheese has a delicate, sweet and aromatic flavor.
The matured version, Pecorino Sardo Matured has a stronger flavor and a darker color.
In order to comply with US FDA regulation for export to the USA the maturation of this cheese has been extended to over 60 days....
