Cahills Porter

Cahills Porter is made from pasteurized cow's milk and is considered a vegetarian cheese because a vegetable rennet is used. It goes without say that a dark beer is an appropriate accompaniment.
The blending of cheddar with porter is both striking to the eye and easy on the palate. Pebble-size curds are veined with dark-brown porter beer, creating a rich, marbled appearance. The porter does not overwhelm the cheddar; indeed Cahills Porter tastes only slightly beery, with the porter contributing depth and meatiness to the cheese. The fantastic looking gourmet cheese is a full-flavored and tangy cheddar that is slightly pungent with a firm texture.

Cashel Blue

Cashel Blue was the first Irish blue cheese, named after the Rock of Cashel overlooking the pastures close to the cheese farm of the family Grubb.
This great gourmet cheese is wrapped in gold foil. Cashel Blue has a beige rind, which develops a pinkish cast as it matures, and the paste moves from firm to soft texture. At six weeks of age, when the cheese is first available in the shops, the ivory paste is quite crumbly with a tangy flavor. Over the next six weeks the gourmet cheese develops a much creamier texture and a stronger, more piquant flavor of dried herbs and woody leaf mold.

Gubbeen

Gubbeen is produced in flat rounds and has a yellow ocher washed rind which develops a strong aroma and taste. The maturing cheeses are washed with salt and water every day for three weeks before ready for sale.
This is another gourmet cheese where the cheese maker has opted to switch to pasteurized milk, but the result is still pretty good. Giana Fergusson first made Gubbeen in 1980 from the milk in the Irish county Cork.
Ideally the cheese should be eaten at five to six weeks when the paste starts to run. At this stage the gourmet cheese has a nutty and buttery aroma with a lemon tang. The taste is clean and smooth with nuts, lemons, and touch of the farmyard. There is a good acidi...

Milleens

Milleens is one of the most exciting washed-rind cheeses to come out of West Cork, Ireland. The milk comes from cows that graze the lower mountain slopes of Mishkish Mountain that overlooks the Atlantic.
The cheeses are made in discs. They are matured on the farm for two or three weeks. Some shops sell it straight away; others mature the cheese for another four to six weeks.
Milleens has a wonderfully pinkish-orange washed rind and a firm to creamy paste. The aroma, as you would expect from a washed-rind cheese, is farmyard like but the flavor is rich with sweet floral tones which linger on the palate....
