Queijo de Cabra Transmontana D.O.P is a Portuguese gourmet cheese. This hard cheese comes from the north-western part of Portugal and is made from the milk of the Serrana Negra goat. The milk is very rich in butterfat and protein.
After the Cabra Transmontano is formed, it is salted and allowed to age for a minimum of 60 days.
This lovely gourmet goat cheese is semi hard with a natural white rind with a firm, hard, slightly unctuous texture. Excellent for grating and as a table cheese....

The name Raclette means "scraper" and refers to a group of gourmet cheeses which are melted to make a traditional Swiss dish of the same name. These are mountain cheeses made originally in the Vallais region but are now produced throughout Switzerland. Our cave matured Raclette was kept in sandstone caves and developed a uniquely intensive aroma in about six months. If you prefer a slightly softer version, please try the 'normal' Raclette.

Raschera D.O.P. is an Italian gourmet cheese named after the lake of the same name that is to be found at the foot of Mongioie in the Monregalese Alps. The descriptive epithet "di Alpeggio" ("alpine") can only be added if it is derived from the herds that graze on the pastures above 900 metres in one of the nine municipalities that have a right to apply the D.O.P. label.
Its squared shape in the past allowed for easier transportation in mule baskets and now is appreciated for its easy handling in the maturation cellars.

Reblochon

The existence of the Reblochon this cheese was a well-kept secret within the Haute-Savoie for many years. The cheese was made from milk which was withheld (lait de rebloche) when the tax collectors came to check the milk yields. The farmers did not milk the cows dry. They then finished the milking after the inspectors had gone. This milk was made into a cheese for home use.
Reblochon is made in pinkish-gray discs with a washed rind. The paste is very supple with a number of small holes. It has a fairly pungent aroma but a mild, fruity, and creamy flavor which is quite excellent.

This delicious gourmet cheese from the Netherlands is matured for about 2 years and during that maturation sheds approximately 25% of its original weight. The white spots you will see on the surface indicate the start of mineral and protein crystallization. In comparison to most cheeses that are aged from a few weeks to a few months, this is a masterpiece long in the making.

Ricotta is a by-product of the Italy's cheese making industry. It is made from the whey that is left after the curds have separated out.
For many years whey posed something of a problem as it was not easy to dispose of. Then it was discovered that if whey was heated, the casein particles in the whey would fuse together to create a new curd. Drain this curd and you have Ricotta.
Ricotta is sold as a fresh white cheese with a granular consistency. In local shops in Italy it is often shaped like an upturned basin with basketwork marks on the outside, but most of it is sold in plastic tubs. The flavor is mild and sweet.

Robiola Mondovì is also called Robiola di Ceva and is produced in the province of Cuneo in Piemonte. The cheese is made from pasteurized cow's milk.
After the coagulation process, the soft curd is broken up in put into moulds. After a couple of days draining, Robiola Mondovì is dry-salted with sea salt. Then the maturation time of 20 days starts.
The rind will have some white mold, is soft and the paste is moist. The aroma is sweetly milky and quite salty. Ideal in every season and, as a special end to a meal, heated over the range and served on rounds of toasted bread....

Rocamadour is also called Cabécou de Rocamadour. A very small gourmet cheese, 2 inches in diameter and 1/4 inch thick and weighs about one ounce.
The AOC status for Rocamadour cheese was granted in 1996. Rocamadour is small-sized and round-shaped like all other goat’s cheeses.
Made with raw goat’s milk, this cheese's rind is thin and its paste soft and creamy, with a subtle scent reminiscent of milk and mould. The aftertaste is light and the aroma of hazelnuts quite present.
The appearance of the rind varies depending on the maturing period which may not, however, exceed six weeks.

Roccolo

Roccolo is a complex Italian cow’s milk cheese with a washed rind. This gourmet cheese comes from a region in Italia that is known for its washed rind cheeses; Valtaleggio. Another cheese from that region Taleggio.
The cheese is aged about 6 months on pine boards in natural caves; the long maturation and the washing in brine results in a complexity of flavors.
The rind is crunchy, salty, and tacky, but does not have the orange-like coloration as you see in many French cheeses. The paste is dense and smooth; the centre is dryer than just under the rind. The color of the paste is very light yellow near the rind to white in the centre.

Roncal

Roncal D.O. is a traditional, unpasteurized, hard cheese made from sheep's milk. It has a hard, natural rind covered with a velvety-smooth layer of beige-gray mould.
Aging period lasts at least four months. The firm, elastic interior is slightly grainy, with small, irregular holes. The greenish moldy surface is occasionally covered in olive oil.
The flavor owes much to the richness to the milk. It has a sweet, herbaceous flavor, thanks to the natural pastures of wild grasses, herbs and flowers on which the sheep graze.
As Roncal ages it becomes increasingly tangy. It has a hard beige to gray rind with beige interior which turns to amber with age.
