The Dutch Commissiekaas is in France known as Mimolette. Both cheeses are round, like a ball and have a vibrant orange paste. The Commissiekaas is a little sharper than the Mimolette and the rind is smooth and has the same color as the cheese; the Mimolette has a light beige crusty, irregular rind.
Most Commissiekaas is exported, but fortunately, some of the production is kept in The Netherlands and is available for you. The cheese gets its orange color from carrot juice.
When the cheese grows older, the rind of the Commissiekaas will dry out and will start to crack.
