Blue Stilton or just Stilton cheese is named for the little village of Stilton, but it has never been made there. It was, however made nearby and is still made locally within the counties of Derbyshire, Leicestershire and Nottinghamshire.
The paste of the Blue Stilton is crumbly when young, softening and darkening at the rind as it matures. It is a lovely creamy ivory color with well-spread blue veining growing from the center outward. The aroma is sharply nutty and the flavor is full of mellow nuts and fruit. Blue Stilton with Port wine - a fine British tradition. A variety on this tradition is to stick a bottle of Port wine into a Stilton cheese and allow the wine to find its way through the cheese for quite some weeks.
Only when the bottle has emptied completely will the cheese be cut and you will have the chance to taste this delicious wine-cheese combination.

Bonchester

Bonchester is a well-flavored soft gourmet cheese from the Scottish border in Bonchester Bridge in Roxburghshire and is one of the few British cheeses to qualify for the European Union designation of protected origin (P.D.O.).
It is made in a small, round, shallow disc with a white rind which develops a few freckles.
The cheese is made of Jersey milk and can be compared to Camembert, with the following differences: ticker in texture, a buttery taste with a pronounced flowery flavor.
The Bonchester resembles Coulommiers in its production; it is molded into a thicker shape and could ripen unevenly, resulting in becoming runny beneath the rind.

Cornish Yarg

Cornish Yarg is an attractive little Cornish cheese has a unique covering of local nettle leaves which gives it a slightly vegetal or herby taste. Using nettles in this way was once quite common in this part of the world but the practice largely died out in the last century.
The name Yarg does not relate to old Cornish but is simply "gray" spelt backwards. Gray was the name of the cheese-maker who developed the cheese from some old recipes found in an attic.

Double Gloucester is a semi-hard cheese and made from whole milk. Double Gloucester was originally colored with carrot juice or saffron. These days, cheese makers use a vegetable dye called annatto, to give it a warm orange color.
Traditionally Double Gloucester was an unpasteurized, semi-hard cheese which has been made in Gloucestershire since the 16th century. It was traditionally made as a large wheel with a thick rind to withstand annual cheese rolling ceremonies; when cheeses were rolled down the hills in Gloucestershire to protect the grazing rights. Leicester was first made by farmers around the city to use up surplus milk left over from the production of Stilton cheese.
They added carrot juice to give the cheese its vibrant orange color and so it became known as Red Leicester. In fact, there is only one kind of Leicester and it is all now colored with annatto dye.
