Reypenaer V.S.O.P. is truly a Dutch gourmet cheese showpiece. Magnificent and well deserved of the V.S.O.P. designation.
This delicious gourmet cheese from the Netherlands is matured for about 2 years and during that maturation sheds approximately 25% of its original weight. The white spots you will see on the surface indicate the start of mineral and protein crystallization. In comparison to most cheeses that are aged from a few weeks to a few months, this is a masterpiece long in the making.

Bresse Bleu is a soft factory-made blue cheese from pasteurized milk from the Rhône valley of France.
Bresse Bleu also known as Bleu de Bresse was invented in 1950 by the cheese makers of northeastern France as a smaller copy of Gorgonzola.
Our Bresse Bleu is a small 5 oz. / 150 grams drum. The cheese has a smooth, off-white rind and the paste is pale and creamy with patches of greenish-blue veining. There is a light milky aroma and a mild mushroomy flavor.

The milk for the Swiss gourmet cheese Gruyère is brought to the dairy by the producers, and every delivery is strictly controlled and analyzed. The milk will undergo no thermic treatment until its transformation into cheese. This guarantees the preservation of the flora that gives Gruyère AOC its typical taste.

Shropshire Blue

Shropshire Blue cheese was originally invented and produced in Scotland but is now made by some of the Stilton cheese producers. Indeed, it is made in exactly the same way as Stilton except that annatto is added to the milk with the starter culture and the mold. This British gourmet cheese has nothing to do with Shropshire.
Shropshire Blue cheese comes in medium-size drums with a rough brown rind. The paste is bright orange in color with vivid blue veining. The texture is firm and creamy, but also slightly crumbly.
