The winter and holiday season is here and that is a time that many people traditionally enjoy fondue. This warmed cheese, a truly communal dish, is shared at the table in a caquelon, an earthenware pot, over a small burner. With a crackling fire in the background what a wonderful way to spend a cozy winter night - especially with someone special or with the friends and family.
In most Swiss fondue recipes the principal ingredients are Swiss Gruyère, Appenzeller and Emmentaler - used in combination with garlic and white wine; sometimes Kirsch is used to add flavor. Other cheeses are often added to get the flavor you want. It is fair to say that almost each canton in Switzerland has its own fondue recipe.
Fondue comes from the French "fondre" which means to melt. Fondue etiquette standards ranging from practical to amusing. Some people consider it rude to allow one's lips or tongue to touch the fondue fork, and therefore some use a dinner fork to remove the bread from the fondue fork. The are "no double-dipping" rules and if the bread is lost in the cheese, it is Swiss tradition for that person to buy a round of drinks .
Enjoy your fondue during!
