Saint Paulin or Port Salut, traditionally a French monastery gourmet cheese, is a creamery, soft cheese made from cow's milk.
The cheese made from pasteurized milk is produced in wheels of various sizes. We offer you a 1 lbs. 2 oz / 500g piece cut from a large wheel that nicely shows the pale yellow interior of the cheese. The thin, washed rind is smooth and leathery and ranges in color from pale yellow to bright mandarin orange.
We also have a small wheel of Saint Paulin of 11 oz/320g that does very well on a larger cheeseboard.
