Pouligny St Pierre is a traditional, creamy, French gourmet cheese made from goat's milk with a natural rind. The cheese is often known as the pyramid, because of its shape.
The cheese is made from alpine goat’s milk, perfumed by the heather and herbs of the moor lands. It is soft, wrinkled and ivory-colored. As it ages and dries, the rind becomes reddish-orange, providing a magnificent contrast to the firm, pure white, slightly grainy interior. The time of maturation is approximately 5 weeks.
The taste has a rarefied sour savor, followed by a salty flavor which turns to a sweetness nuttiness. The pate is remarkable white with a fine texture, moist and soft.
