Picodon A.O.C. has thin natural rind and a good white paste. As it matures the rind and the paste harden. The flavor, too, intensifies to a medium-sharp nuttiness. Some young cheeses are pierced and soaked in the local eau de vie; or packed in olive oil with herbs.
Everywhere you go in the south of France you will find a version of these attractive little French gourmet goat's-milk cheeses. They are usually made in small 3 to 4 oz drums and are sold at various stages from young and creamy to old and extremely hard.
