Mascare is a seasonal French gourmet cheese from the "provençales" Alps. It is traditionally produced from a mixture of cow and goat milks. The leaves which wrap each cheese, help the cheese to mature. Mascre is usually only matured for about 15 days which produces an unusual, creamy and strong gourmet cheese
This combination of milks, short maturation, and the leaf wrapper, gives the cheese a floral aroma and it develops a taste of thyme with a slight after taste of pepper. Mascare cheese has a very thin rind with a tender paste.
Our offering consists of 3 Mascare cheeses of 100 grams each.
